Flogas Culinary Theatre
The Flogas Demonstration Theatre will feature exclusive workshops and demonstrations by Irish celebrity chefs, including Martin Shanahan (host of RTE's Martin's Mad About Fish); Kevin Dundon (Irish Independent food columnist and author of Recipes That Work and Full on Irish), Derry Clarke (RTE One reality television show Failte Towers and and Ruaírí Ó Moracháin, the Druid Chef, plus guest appearances by local and nationally acclaimed chefs.

Restaurant of the year 2011 (Georgina Campbell Guide) Michelin-starred recently renovated L'Ecrivain on Dublin's Georgian Baggot Street is one of Ireland's top restaurants. Owned and run by renowned chef Derry Clarke and his glamorous wife Sallyanne, the warm and welcoming l'Ecrivain specializes in French and Irish cuisine, using the only the freshest seasonal ingredients available for signature dishes such as Crisp Duck Confit Seared Clonakilty Black Pudding. It is also well known for its fish, which is caught all over Ireland on the same day as it is served.
L'Ecrivain also has two private dining rooms, Our Malt room on the ground floor seats 12 people and Our new private room upstairs Salon Priv seats 18 people, as well as a terrace garden which is wonderful for dining on a summer's evening in Dublin.
Derry has two cookbooks 'Not Just A Cookbook' & 'Keeping it Simple' which is a must for any kitchen and on sale at reception.
L'Ecrivain extensive wine list, compiled by award-winning sommelier Martina Delaney, features new and old world wines from New Zealand, Bordeaux, Austria, Loire Valley, Burgundy, Chile and South Africa. A good selection is available by the glass or half bottle.

Biography
Kevin Dundon is the Chef/Proprietor of Dunbrody Country House Hotel & Restaurant, located in Ireland's sunny South East. Dunbrody was established in 1997 by Kevin and his wife Catherine and has very quickly become a must-see for all foodies. It is now considered to be one of Ireland's Premier Hotels & Restaurant. Kevin's runs a cookery school at the hotel as well which already recognised as one of the most respected in the country.
Kevin started his career in Dublin, Ireland in a restaurant called The Old Schoolhouse and continued his studies at Dublin College of Catering where he graduated in 1986. He received a scholarship to work in Switzerland and worked in Zurich in a well known restaurant called La Mère Catherine.
Though Kevin's media profile continues to flourish, he still remains passionate about his role as a Chef and is Chef/Patron of an Irish Gastro Pub in Disneyland, Orlando called Raglan Road Irish Pub and Restaurant. Another Raglan Road was opened in Kansas City in 2008 with plans for furthur expansion.
His first book, Full on Irish, was published by Epicure Press in 2005. In 2009 Dundon published his second cookery book "Great Family Food" in association with Harper Collins and in 2011 his most recent "Recipes that Work". Kevin's writing extends to journalism as well and he has written for BBC Good Food Magazine and Delicious among others.
Kevin is the resident Chef with the hugely successful FOUR LIVE, RTE's flagship afternoon programme.
In 2009 Kevin Dundon launched the "Dundon Food Experience", a new product range of jams and chutneys and it is available in most good retail and gourmet stores.
Kevin and Catherine have three Children; Emily, Sophie and Tom.
Ruaírí Ó Moracháin

Dubliner and local Dun Laoghaire man Ruaírí Ó Moracháin is fluent Irish speaker with an enthusiasm for all things Celtic.
Having refined his culinary talents in the world's greatest hotels including: the Dorchester, the Ritz and the Berkeley in London; the Baur au Lac in Zurich; the Ritz-Carlton in New Orleans; the George V in Paris and the Nassuerhof in Wiesbaden, Germany, he realised that the revival of the great ancient Celtic dishes should be his life's passion. For this purpose he journeyed through the south of Spain, France, Britain and back to Ireland where he set to work creating Celtic Fusion drawing together cooking traditions of various lands to produce an exciting menu that is fresh, modern and delicious.
Rair, whose enthusiasm and down-to-earth charm delights TV audiences, has appeared on television in the US, Britain, the Continent and here in Ireland where his shows included two series of Celtic True Food and a Christmas special for TG4, and regular appearances on The Late Late Show, The Afternoon Show and TV AM.
His Celtic Fusion, which he presents in the persona of the Druid of Food, is part travelogue, part food adventure, part natural history and completely enjoyable. The experience translates brilliantly from the screen to the intimacy of a restaurant.
Over the last 5 year Ruaírí Ó has carried out innovation in new product development with a strong Irish influence and he has developed a full range of ready-to-eat and ready-to-cook fish dishes for Superquinn, Dunnes Stores and Supervalu, and innovative products for the Marks and Spencer in Britain and Ireland.
